A Waffle Lot of Pancakes

Things at Black Kite Coffee do not stand still. We continue to remember Bishal and we trust that he would want to see us moving forwards.

On a day to day basis, we open the cafe at 7.30am, which includes taking out the tables, cleaning all the floors and surfaces and calibrating the coffee machines for that day; more an art than science if you ask me, but it can make or break the customer experience for that day if not done properly. Salome remains our excellent part-time barista, giving us a chance to tackle other jobs or simply to have a quick power nap.

The community around us also does not stand still. 

New visitors are always passing through, often because of the nearby hospital and primary school, but often linked to other mission enterprises happening throughout Pokhara and beyond. 

Recently, we have been getting to know a retired couple from the US who are applying to stay long-term in the country. Jim is a retired forester with an interest in regenerative agriculture, whilst Mary has substantial experience in the medical world as a nurse practitioner. Jim is a self-described introvert, but takes great joy in the (almost) nightly dinners that Mary puts on for new friends and contacts. Needless to say, they are getting to know large numbers of people in double-quick time.

And so, very much the ‘people-person’ and an accomplished baker to boot, Mary has started regular training sessions with Varsha at the cafe, helping her perfect European crepes and learn the art of making American pancakes. They both seem to really enjoy the mutual exchange of ideas and chitchat.
