Always Evolving

Whilst coffee culture is growing in Pokhara, and Nepal more widely, promoting new cafe offerings in each new season is something we are consciously choosing to do to increase cafe footfall.

As spring temperatures push into the 80’s and as the rainy season approaches, we have begun to notice an uptick in sales of some of our ice drinks, most notably our homemade lemonade, together with the mysteriously named Ocean Magic Punch and Sunrise Kiss! In order to attract families from the nearby schools, we will soon also be rolling out ice-cream waffles, still somewhat of a novelty in Nepal (and the UK for that matter!).

Coffee however, remains our core business. 

As sales of our staple ‘wash-processed’ coffee continue to climb, the second year of business should see us venture into the realm of ‘speciality’ coffees. Commanding a much higher price, coffees that have been processed in different ways can produce remarkably different tastes - often much fruitier and stronger.  

With that in mind, look out for anaerobic, natural and ‘honey’ processed coffees in the coming months and years. 

To carry out the different roasting profiles for each type of bean, our bean temperature monitoring system should come into its own. Providing real time data, the system was made possible by our friend and engineer, Matthias (pictured). Look out too for the accompanying packet designs, which will combine our initial brand with the work of local female artists, thereby giving each coffee-type a unique feel…
